Methi Paratha

Ingredients:


Wheat flour             -   2 cups
Fresh methi             -  1 cup
Asafoitida                - 1 tea spoon
Ajwain                    -  1 tea spoon
Jeera powder          -  1 tea spoon
Red chili powder     -  1 tea spoon
Green chillies           -  2 nos
Ghee or oil              -  4 - 5 table spoons
Salt to taste


1.  Clean and finely chop fresh methi leaves.
2.  Finely chop green chillies.
3.  Take wheat flour in a bowl add salt, chopped green chillies, methi, ajwain, jeera powder and red chili powder and by adding water make it to tight dough.
4.  Add 1 table spoon of oil and mix and keep it aside for 1/2 hr.
5.  Take little of the dough (a large lemon sized) and roll it using rolling pin.
6.  Grease one side of the paratha with ghee or oil or even butter (1 tea spoon).
7.  Fold it twice and after dusting the rolling board and also the folded paratha roll it again to a regular chapati size.
8.  Heat tawa and place the rolled paratha and pour 1 tea spoon of ghee or oil.
9.  After it is cooked turn the paratha and cook both sides till dark brown spots appear and the methi leaves are cooked.
10.Methi paratha ready.  Serve with curd and pickle.
